So it's a weekday morning and you want pancakes, but there's no way you have time to even make them with a mix? No problem! Don't turn to those questionable quality frozen pancakes, just premake your own homemade pancakes from your own homemade mix, and freeze them yourself! Frozen pancakes are not only vastly overpriced, but they have little nutritional value and often have a list of ingredients that reads like a novel...or a science project. Homemade pancakes can pack a great nutritional punch, and like most bread related products, they freeze beautifully.

On a weekend or a day when you do have a few extra minutes, make your pancakes. Preheat your griddle to 350-375 F. If you're using the Homemade Pancake Mix in my earlier post, again, for each 1 cup of dry mix you should beat together 1 beaten egg, 2 Tbs. oil, and 3/4 C. buttermilk or milk, add these liquid ingredients to the dry mix, and stir just until it comes together. Small lumps are fine, but get out the bigger lumps.
After the batter has rested, pour the batter on your griddle to make the size of pancakes you prefer. I usually make kind of medium sized pancakes, and I get about 8 or 9 pancackes from a cup of dry mix. Griddle the pancakes just as you would any other pancake, until cooked through and golden on both sides.
Place your pancakes on a rack to cool completely.
Once your pancakes are completely cool, store them in zippered freezer bags, with a piece of waxed paper between each pancake so they can't stick to each other, and place the bag in the freezer.
Now on that hectic weekday morning when you really want a nice warm, sweet pancake, all you have to do is reach in the freezer, pull out as many pancakes as you want, put them on a plate, and microwave for about a minute or so, depending on your microwave and how many you're making.
